Batter Dinner Rolls


3 1/4 cup all-purpose flour 1 pkg. active dry yeast
1 cup milk 1/3 cup sugar
1/3 cup shortening 1/2 tsp. salt
2 eggs


Combine 2 cups of the flour and the yeast. Heat and stir milk, sugar, shortening, and salt just till warm and shortening almost melts. Add to flour mixture along with eggs. Beat with an electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 3 minutes. Using a spoon, stir in as much of the remaining flour as you can.Spoon batter into greased muffin cups, filling half full. Cover and let rise in a warm place till nearly double (about 45 minutes). Brush roll tops with milk. Bake in a 375 degree oven for 15 to 18 minutes or till golden. Makes 18 rolls.
