Black Bottom Pie

Ingredients

2 cups milk 1 envelope plain gelatin
1 TBS cornstarch 3/4 cup sugar
4 TBS cold water 4 egg yolks , beaten (use whites later)
2 squares baking chocolate, melted 1 tsp. vanilla extract
4 egg whites 1/2 cup sugar
1/8 tsp. cream of tartar 1/2 pint whipping cream, whipped
3 TBS powdered sugar 2 squares baking chocolate, grated
1 pie shell, baked

Preparation

  1. Soak gelatin in cold water (set aside)
  2. Scald milk & add sugar & cornstarch
  3. Stir until smooth
  4. Add beaten egg yolks
  5. Cook in top of a double boiler until thick, stir constantly
  6. Stir in dissolved gelatin
  7. Divide custard into halves
  8. Add chocolate & vanilla to one half
  9. Pour into a baked pie shell
  10. Cool remaining half of custard
  11. Beat egg whites & cream of tartar & slowly add 1/2 cup of sugar
  12. Blend with cooled custard
  13. Spread over top of chocolate layer
  14. Chill in refrigerator
  15. Whip cream & sweeten with 3 TBS powdered sugar
  16. Top custard with sweetened whipped cream
  17. Sprinkle grated chocolate on top of whipped cream
  18. Chill well before serving
