Candied Sweet Potatoes


2-3 sweet potatoes, peeled and sliced
2 tablespoons butter
1/2 cup packed brown sugar
2 tablespoons light corn syrup
1 tablespoon unsweetened pineapple juice
1/8 teaspoon ground allspice
2 cups miniature marshmallows


  1. Arrange sweet potato slices, slightly overlapping in 10" pie plate. Set aside. In 1-cup measure, microwave butter at High for 45 seconds to 1 minute, or until melted. Stir in remaining ingredients, except marshmallows. Pour evenly over potatoes. Cover with microwave-safe plastic wrap.
  2. Microwave at High for 8-11 minutes, or until tender, rotating dish once. Remove plastic wrap. Sprinkle potatoes with marshmallows. Place under conventional broiler, 8" from heat. Broil just until marshmallows are light golden brown, about 1 minute.
