Chicken Bog
(All South Carolina cookbooks must have Chicken Bog!)
Ingredients
1/2 stick margarine | 1 green pepper |
1 medium onion | 1 cup diced celery |
2 cups uncooked rice | Lots of pepper and salt to taste |
1 chicken, boiled off bones | 1 smoked sausage or hot Italian sausage, sliced |
4 cups chicken broth |
Preparation
Boil chicken off bones. Remove bones and skin. Saute onion, green pepper and celery in margarine. Add chicken broth and bring to a boil. Add rice; stir. Cover and cook for 15 minutes. Add chicken and sausage. Season with salt and pepper. Cover and simmer until rice is done.
Note: If you do not have enough chicken broth you may use 1 can cream of chicken soup.Serves four hearty appetites!
