(All South Carolina cookbooks must have Chicken Bog!)
|1/2 stick margarine||1 green pepper|
|1 medium onion||1 cup diced celery|
|2 cups uncooked rice||Lots of pepper and salt to taste|
|1 chicken, boiled off bones||1 smoked sausage or hot Italian sausage, sliced|
|4 cups chicken broth|
Boil chicken off bones. Remove bones and skin. Saute onion, green pepper and celery in margarine. Add chicken broth and bring to a boil. Add rice; stir. Cover and cook for 15 minutes. Add chicken and sausage. Season with salt and pepper. Cover and simmer until rice is done.
Note: If you do not have enough chicken broth you may use 1 can cream of chicken soup.Serves four hearty appetites!
