|1 cup packed brown sugar
|1/4 cup dry mustard
|1/4 cup apple or orange juice
|8 to 10 lb. fully cooked boneless ham
- In a small mixing bowl, combine all ingredients, except ham and cloves. Mix well. Set aside. Score and spice ham (below).
- Heat conventional oven to 325 degrees. Estimate cooking time at 10 to 15 minutes per pound. Place ham scored side up on rack in large roasting pan.
- Brush with glaze during last 30 minutes of roasting time. Roast for remaining time, basting with drippings once.
- Decorate ham with quartered orange slices, if desired. Secure orange pieces with cloves in diagonal lines. Baste ham with drippings and return to oven for 10 minutes.
Scoring & Spicing Ham
Score top of ham in 1 inch diamond pattern, cutting 1/4 inch deep. Insert 1 clove in center of each diamond.
