Lemon Chess Pie
Ingredients
3 eggs, separated | 1/4 cup butter, melted |
1 2/3 cup sugar | 1/4 cup lemon juice |
1 tbs. flour | 1 tbs. cornmeal |
1 lemon rind, grated | 1 pie shell, unbaked |
Preparation
Beat egg yolks & add melted butter. Add lemon juice & grated rind.
Combine sugar, flour, & cornmeal & add to egg mixture. Beat whites until
stiff & fold into mixture. Pour into unbaked pie shell. Bake at 350 for 45
minutes or until lightly browned.
