Lemon Meringue Pie


1 cup sugar 2 eggs, separated
5 TBS flour 1 1/2 cups hot water
1/4 tsp. salt Juice & rind (grated)of one lemon
1 baked pie crust 1/4 cup sugar


Sift together sugar, salt & flour.  Place in a saucepan. Stir in hot water & cook until thickened.  Remove from heat & slowly add beaten egg yolks one at a time. Return to heat & cook 1 minute. Stir in lemon juice & grated rind.   Pour into baked pie crust.  Beat egg whites until stiff & add 1/4 cup sugar.  Spread on top of pie.  Bake at 350 until meringue is golden brown.
