Lemon Meringue Pie
|1 cup sugar||2 eggs, separated|
|5 TBS flour||1 1/2 cups hot water|
|1/4 tsp. salt||Juice & rind (grated)of one lemon|
|1 baked pie crust||1/4 cup sugar|
Sift together sugar, salt & flour. Place in a saucepan. Stir in hot water & cook until thickened. Remove from heat & slowly add beaten egg yolks one at a time. Return to heat & cook 1 minute. Stir in lemon juice & grated rind. Pour into baked pie crust. Beat egg whites until stiff & add 1/4 cup sugar. Spread on top of pie. Bake at 350 until meringue is golden brown.
