1 1/4 all-purpose flour
1 cup milk
2 1/2 tsps. baking powder
1/4 c. butter or margarine, melted
1/2 tsp. salt
1 egg, beaten
1 c. rolled oats
1 tsp. vanilla
1/2 c. sugar
1 c. chopped strawberries
Preheat oven to 425 degrees. Grease 12 (2 1/2 inch) muffin pans.
Sift flour, baking powder and salt into large bowl. Stir in rolled oats and sugar; set aside.
Combine milk, butter, egg and vanilla in small bowl.
Stir milk mixture into dry ingredients just until moistened.
Stir in strawberries.
Spoon batter into prepared muffin cups, filling each 1/2 full.
Bake 15 to 18 minutes or until lightly browned and toothpick inserted in center comes out clean.
